POSITION

We have a full-time position of Chef available in Cairns, QLD 4870.

SKILL LEVEL

The employee must have a relevant Diploma Qualification and at least 3 years of experience relevant to the position.

RESPONSIBILITIES

The Chef oversees a restaurant's kitchen by managing other members of the food preparation team, deciding what dishes to serve and adjusting orders to meet guests' requests. May assist in prep work, such as chopping vegetables, but more often will be involved in cooking specialty dishes. Chooses ingredients and designs a menu based on the seasonal availability of food items. Creates unique dishes that inspire guests to come back again and again to see what is new in the restaurant.

POSITION DUTIES

You will need to undertake the following duties:

  • Develop and plan menus based on seasonal ingredients and culinary trends, experimenting with new recipes to create signature dishes that attract guests.
  • Oversee and participate in the preparation and cooking of meals, ensuring all dishes are prepared to guests' preferences and meet health and safety standards.
  • Manage and supervise the kitchen team, including training, coaching, and overseeing sous chefs and other staff to ensure smooth operations during service.
  • Create and manage the kitchen's time schedules and rostering, ensuring optimal staffing levels and smooth shift transitions.
  • Respond to guests' special requests or dietary needs, adjusting orders as required.
  • Review all food before serving to ensure it meets the restaurant’s quality standards and complies with food safety regulations.
  • Ensure that all kitchen staff follow food safety best practices and proper sanitation procedures.
  • Manage inventory, order ingredients and ensure sufficient supply levels are maintained, while overseeing the proper handling and storage of all food products.
  • Work efficiently during peak periods, such as weekends and evenings, to maintain smooth service and minimise delays.
  • Train apprentices and kitchen staff, ensuring they are equipped with the necessary skills and knowledge.
  • Take on additional tasks such as cleaning or assisting with other duties when the kitchen is short-staffed or particularly busy.
  • Maintain a safe working environment, adhering to regulations regarding the use of knives, high-temperature surfaces, and other kitchen equipment.
  • Collaborate with the restaurant’s management team on scheduling, ordering, and other operational needs.
  • Supervise meal service to maintain consistency in the quality and presentation of dishes.
  • Develop and introduce new menu items to keep the menu fresh and exciting.
  • Manage stock levels and place orders for ingredients as needed.
  • Organise and maintain cleanliness and organisation of all workstations and kitchen equipment.

REQUIREMENTS

  • Extensive knowledge of food preparation regulations, health, and safety standards.
  • Proven ability to work in a fast-paced, high-pressure kitchen environment.
  • Strong leadership skills with the ability to train and manage kitchen staff.
  • Creative culinary skills with a passion for menu development and food presentation.
  • Excellent organizational and communication skills.
  • Ability to manage multiple tasks and food orders simultaneously.
  • Strong understanding of raw materials, quality control, and cost management.

SALARY

The salary offered will be $70,000 to $80,000 per annum based on your experience.
